I wrote the program, and the winner is:
*ears, with 11 possibilities, followed by
*ails, with 10
Only the first and middle letter variant had instances with more than 6 possibilities, > ~20 for the first and 5 for the middle.

The answer is never a plural, though, is it? At least not a standard 'ending in s' one.

LOL, yes, I realised that, in the middle of the night!
Also, I don't recollect them using the third person singular of verbs, which gets rid of quite a few more.
The following have seven alternatives and don't end in the letter 's':
*ated
*ound
*owed
*ower
*ater
*ight
For the middle letter variant we only have:
ra*ed with 8 (although 'rased' is pretty obsolete) and
pa*ed with 7.
There are some rather obsolete words in there. A workmate of mine does the wordle too and we share our guesses. IIRC he misspelt raised once and it accepted rased.
